If you are like me, you love chocolate! In fact, if I am not careful, it can be my downfall! But, the good news is that if you can moderate yourself, a bit of it is actually fine.
When I am working with people on their health, we focus on eliminating processes junk foods and eating more healthy, whole foods. That means generally, no breads or baked goods. That can be tough. That is where this Chocolate muffin recipe comes in handy. You honestly feel like you are eating a chocolate cupcake, but it has no refined sugar, no grains and is full of zucchini! When you look at the ingredients you will wonder how these turn into muffins, which is why I posted an actual picture of the muffins I just made so that you can see that it really does make muffins :)
I use almond butter and if I don't want any sweetener, I use stevia in place of the small amount of maple syrup used to sweeten this. The raw cacao powder is full of antioxidants and fiber so that is a bonus! I also make muffins instead of zucchini bread, but that's just a personal preference. The muffins are super easy to grab on the way out the door!
